A quick and easy recipe for steamed eggs with minced meat - a classic Chinese egg dish made flavourful by using a combination of chicken eggs, century egg, salted duck egg and minced meat.

Ingredients
A
1salted eggcooked, diced
1century eggdiced
3eggslightly beaten
50gminced pork or chicken
150mlwater
½tspsalt
⅛tsppepper
½tspchicken seasoning powder
B
1tbspchopped spring onions
1tbspfried garlic oil or shallot oil
1tbsplight soy sauce
Instructions
Combine ingredients A in a mixing bowl. Mix well and pour into an 8-inch round steaming tray or heatproof dish. Cover with cling wrap by pulling tightly over the rim of the dish on all sides, so as to ensure that the wrap is cleanly off the surface of the egg and meat mixture.
Steam over medium heat for about 10 minutes, or until the mixture has set. Remove, spread ingredients B over the surface and serve hot.
